As the days grow shorter and the air crispier, there’s nothing quite like a cozy, satisfying casserole. With their rich and hearty layers, casseroles are the epitome of comfort and warmth. Whether it’s Thanksgiving, Christmas, or just a regular weeknight, this one-pot wonder is super hands-off so you can spend less time in the kitchen and more time with family and friends.

Ingredients

Topping (optional): Better Than Bacon Topper

Preparation
  1. Preheat oven to 425° F.
  2. Heat oil in Sauté Pan over medium-high heat; add chicken and seasoning. Cook until browned, 3–4 min.
  3. Meanwhile, roughly chop broccoli.
  4. Add broccoli, broth, carrots, rice, and butter to pan; bring to a boil. Cover and reduce heat to medium-low. Simmer 20 min, until liquid is taken up and rice is almost cooked.

  6. Transfer pan to oven. Bake 15 min, until cheese is melted and starting to brown.
